Putting up corn today
 
We started picking sweet corn this morning.....got about 5 bushels off 2 rows 100' long. Making some up as creamed corn and canning it.....30 pints....then freezing the rest as kernel....probably about 5 gallons or so.... + dozen ears on the cob for fresh eating next couple days ( you hear me Rich G ? ) and another dozen to the neighbor.

Mrs Tn Andy has green peppers in the dehydrator.

Also picked a bowl of fresh peaches off our trees, going to make some hand cranked ice cream.

Life is good :D

Recipe ?

She makes creamed corn ( cut the corn off the cob, cutting the kernels about mid depth....then scrap the cob for the "creamed" part ) with the corn, some milk, bacon fried and crumbled in, salt, pepper......mmmmmmmmmmmm.......eat til it hurts.....

Andy , sounds like a productive weekend, enjoy that corn this winter.
This week it's been canning gean beans... labour intensive now, but so damn good in January just like your sweet corn.
Next week tomatoes and salsa.

All the above, then cook it in a skillet with bacon fat. "Fried Corn" Mmmm Mmmm Gooood!!!! Just different names for the same dish.

Looks that way once you "clean it up" a bit.

The corn borer worm works on the ends of all of it....I don't spray anything for them, just whack off about 2-3" where they chew on it....so when it first comes out of the shuck, it's not that pretty. But I like knowing I'm not eating a bunch of chemicals.

TN Andy, ever try some of the newer versions of the Indian corn (painted mountain, etc.)? Allegedly the colors have tons of antioxidants (like blueberries) that got bred out of them by the white man. I like the sweet corn too, but have been growing the other stuff and its not bad as corn on the cob as long as you aren't expecting sugar sweet enhanced hybrid number XXX. Went away for the weekend and came back to rows of canned green beans, blueberry jam, and peach marmelade! I guess I'll stick with my wife....

Did you plant heirloom this year? Do you save seeds for next year.

I went all heirloom this year and am not doing very good (on corn). Picked 5 ears of corn for dinner last night, tasted good, not great. Rest aren't ready yet.

The okra is doing better than anything else i have.

Beans - ehh
corn - ehh
okra - great!
carrot - FAIL
celery - FAIL
tomatos - FAIL - went and bought plants at Wal-mart and those are doing great.
onions - FAIL
jalapenos - FAIL

went and bought some bell pepper plants that are doing good. Soil is fine, guess just bad seeds?

The sweet corn was hybrid, but I have out two open pollinated field corns.....the Hickory King I raised last year, planted from that saved seed, and Reid's Yellow Dent I got some seed this year. I'll save both seed for next year.

Just got back from the dentist this morning and there were about 15 wild turkey in the garden....(sorry, no long lens)...the little black spots between the garden and the apple tree....the Reid's corn is on the lower side, the Hickory King on the upper....

I try to grow organically too and that includes not using commercial fertilizer, although I do spread compost rather generously and mulch to retain moisture and hold down weeds. But I do have to say that the results are usually not all that spectacular. My Roma tomatoes, for instance are small. I know that Romas are not a big variety (by big tomato standards) but I also can compare mine with what I can buy from the grocery store. At least my Yukon Gold potatoes came in beautifully this year. Yields were not great. But the taters were decent sized and hardly any scab.

A) Andy, love your kitchen, envy the island, get rid of the vinyl floor, though.

B) My okra has been insane this year. Also, banana, green chile and cayenne peppers are coming out my ears. Everything else either failed entirely or I can eat it about as fast as it grows.

C) Wild turkey are great eating, why do you think there is a season set aside just for them?
